Farina di Pizza : Your pizza base starts its journey as high quality raw grains sourced from hill slope fields overlooking the Via Casilina, an ancient Roman road in the Latin Valley. This carefully selected grain is milled into flour with a high level of organoleptic, health and nutritional value by a small artisan family business with nearly a century of expertise. Early each morning our chefs use this slow-fermenting flour to start creating your pizza dough in a process of kneading, rising, shaping and proving.


Organic Volcanic Tomatoes : We hand grind plum tomatoes from the nutrient rich eastern agricultural lands of active Mount Vesuvius to create our pizza sauce. Nourished by the river streams flowing towards the Bay of Naples, the moist oceanic air and the warm Mediterranean climate; the quality of earth has allowed vineyards to thrive organically. The soil is formed from volcanic ash containing valuable minerals and eroded lava, which stores fresh water and releases it slowly during the summer, ensuring the growth process is entirely natural.
